  1. Mix the salt, pepper, garlic powder, and Mrs. Dash in a small bowl. Rub on all sides of the pork butt.
  2. Heat a Dutch oven over medium heat with just enough olive oil in the bottom to keep the meat from sticking. Sear the pork butt on all sides including the ends (support with tongs if you need to). Your not cooking it here your just searing it for flavor. It should only take a minute or so per side. Remove and set aside.
  3. Sauté the onion in the same pan. Add oil if necessary. (You just want to sear them as well your not cooking it yet.)
  4. Add the broth, bay leaves, and pork butt back into the pan.
  5. Place uncovered in a oven preheated to 350. Cook for 2 1/2 to 3 hours (till thermometer reads 170).
  6. Place roast on a cutting board and remove strings. Let meat cool for 10 minutes before cutting/ pulling.
  7. Serve with bbq sauce as a sandwich.
Recipe Notes

It is great at room temperature or you can heat it with the bbq sauce in a large pot on low before serving.
